TBTB

I know, I've been a bad blogger. We've been too busy having fun! The weather has been wonderful, the friends plentiful, and the world spinning! My mom decided that I was TBTB (Too Busy To Blog). So here's some randomness:
See how in this picture he is in his seat belt. How do I get him to stay that way? I cannot get him to keep his arms under the straps, he pushes the little clip part down around his belly and slips his arms out, now form there he has occasionally crawled out but parental wrath ensued and this has stopped. But nothing is keeping him in the arm straps, should I just move up in car seats? 
Next, I made wonderful chiken tonight. I got the recipe from a friend who says it's been in the family for a long time! I was so excited to make it, and it turned out wonderful- probably the best chicken I've ever had! It's cheap, healthy, and good, what more could you want? (forgot to take a pic)Try it:
Balsamic Chicken
1 (5-6 lb.) whole free range organic fed chicken
2 tbs. chopped fresh rosemary
2 tbs. salt
3 garlic cloves chopped
1 tbs. fresh black pepper
2 chopped red onions (doesn't have to be small pieces, they are for flavoring, so don't waste your time or your eye makeup chopping them finely)
1/4 cup balsamic vinegar
1/4 cup red wine

Rinse bird and remove any fat pieces. Combine rosemary, garlic, salt and pepper. Rub this mixture all over the bird, inside and out. (I left the skin on to keep the meat moist and rubbed underneath the skin and inside.) Let sit for at least 1 hour in the refrigerator (although this can be done up to 24 hours in advanced).  Heat oven to 350F. Sprinkle chopped red onion in the bottom of a glass or metal casserole dish or roasting pan, and on top of the chicken. Pour the balsamic vinegar and wine over the chicken. Roast the chicken for approximately 2 hours. Serve the chicken with the balsamic mixture from the bottom of the pan. (I added a little balsamic and wine throughout the cooking.)

It is magnificent! And so easy. We had steamed broccoli and mashed potatoes and the rest of the red wine!
