Make this wonderful tortilla soup! Souper (get it?) easy, really healthy, and your leftovers take on a whole new life!
Ingredients:
1 Tablespoon canola or vegetable oil
1 diced red onion
left over chicken pulled apart into bite sized pieces (original recipe calls for one pound of turkey breast)
5 cups chicken broth
3 garlic cloves crushed
1 tsp. red chile powder
1 (4 ounce) can diced green chiles
1 can corn (NOT drained)
1 can black beans (drained)
1 tomato chopped
1 avocado
mexican cheese blend shredded
blue tortilla chips
light sour cream
cilantro
Directions:
1. Saute onions in oil
2. Add all ingredients before avocado into a big pot bring to a boil, reduce the heat and let simmer for at least 10 minutes. (I let it simmer for about 45 minutes just because David was late getting home ;)
3. Put chopped avocado on the bottom of bowls, scoop soup on top add fresh cilantro, cheese, and a dollop of sour cream, chips on the side or sprinkled on top! I also added a little fresh lime and a beer, perfect-o!
We're off to spend a few more days in the mountains before the snows all gone and cold is only a distant memory!
